- Sea salt and freshly ground black pepper
For the red wine sauce
- 2 Tablespoons Olive Oil
- 200 g Beef Trimmings
- 4 large Shallots
- 12 Black Peppercorns
- 1 Bay Leaf
- 1 sprig Thyme
- Splash of Red Wine Vinegar
- 1 x 750ml Bottle Red Wine
- 750 ml Beef Stock

- Wrap each piece of beef tightly in three layers of cling film to help shape it. Chill overnight.
- Remove the cling film. Heat a little olive oil in a hot pan and quickly sear the beef for 30–60 seconds, turning to brown all sides while keeping the center rare. Remove and let cool.
- Finely chop the mushrooms. Fry them in a hot pan with a little olive oil, thyme leaves, and seasoning. Once they release their moisture, cook over high heat for about 10 minutes until completely dry and paste-like. This mushroom mixture is called a duxelle. Set aside to cool.
- Cut the pastry in half. On a lightly floured surface, roll each piece into a rectangle large enough to wrap one beef fillet. Chill in the refrigerator.
- Lay a large sheet of cling film on your work surface. Arrange four slices of Parma ham in the center, slightly overlapping to form a square. Spread half of the cooled duxelle evenly over the ham.
- Season the beef and place it on top of the mushroom mixture. Use the cling film to wrap the Parma ham around the beef. Roll and tie the cling film tightly to create an evenly shaped log. Repeat with the second fillet and chill for at least 30 minutes.
- Brush the pastry with egg wash. Remove the cling film from the beef and wrap each fillet in pastry. Trim away any excess pastry, then brush the outside with more egg wash. Cover with cling film and chill for at least 30 minutes.
