Season the duck’s cavity with salt and pepper for Gordon Ramsay’s Roast Duck, and add spring onions, garlic, ginger, and star anise. Rub the duck with five-spice powder and roast for about 4 hours.

Add garlic, black bean sauce, vinegar, soy sauce, and honey to a saucepan and cook for about 3-4 minutes. Flake roast duck skin using forks and serve with dipping sauce and pancakes.

If you are using frozen duck, make sure it is fully defrosted. Remove the duck’s giblets. Rinse the duck, inside and outside, with cold water. Pat dry with paper towels.

Expert Tips That I Recommend

  • Make sure the duck’s cavity and skin are properly dried for crispy skin. For best results, leave the uncovered duck in the refrigerator for 24 hours.
  • Be very careful while pricking the skin with a skewer or toothpick. Avoid piercing the skin too deeply.
  • Rub these seasonings thoroughly into the duck’s skin, but avoid adding excess seasoning to the cavity. Excess seasoning can make it taste bitter during the long cooking process.
  • Place the duck on a rack over a roasting tin so the rendered fat can drain away easily.
  • Avoid adding honey to the skin, as it may burn during cooking.

Recipe Variation for Different Diets

  • Keto Version: Make sure the seasoning added is sugar-free. Swap Chinese pancakes for lettuce leaves; instead of honey, add monk fruit sweetener; use coconut aminos in place of soy sauce.
  • Gluten-Free: Use gluten-free pancakes instead of Chinese pancakes, and use tamari instead of soy sauce. Make sure the seasonings you add are gluten-free.

Storing And Reheating This Recipe

Storing

  • Let the duck cool completely once cooked, then wrap it in plastic wrap and place it in an airtight container. Then store it in the refrigerator, and it will remain fresh for up to 3 days.
  • You can also freeze it; just pack the duck in a freezer-safe bag. It will remain fresh for 3 months.

Reheating

  • Stovetop: Heat a skillet, add the duck, and warm over medium-high heat for 2-3 minutes. Also add some broth if needed. Then cover and heat for 5-8 minutes.
  • Oven: Preheat the oven to 180°C. Reheat the duck for 10-15 minutes. For an extra-crispy layer, increase the temperature to 200 °C.

What To Serve With This Recipe

Serve the Crispy Gordon Ramsay Roast Duck with crispy lettuce leaves or rice pancakes. If you want something different, try pairing it with coleslaw and garden salad to keep it simple and healthy. My all-time favorite way to enjoy it is with a bean sauce on the side. You can add plenty of options to this roast duck to elevate the flavor.

FAQs About Gordon Ramsay Roast Duck

How long does a roast duck take?

Season the duck all over with salt and pepper. Place the duck in a roasting tin and roast for 40 minutes. When the duck is cooked, cover with foil and rest for 10-20 minutes before serving.

How do you crisp up a duck?

Place duck legs into an oiled baking dish. Season generously with salt. Cook in a 300-degree oven for 90 minutes to 2 hours. Crank the heat up to 375 for the last 15 minutes to brown the skin and serve.

How do you make ducks taste better?

Brine the duck for at least 12 to 15 hours. Twenty-four hours in a brine won’t hurt them, but beyond 24 hours, they’ll get a bit too salty. You can brine duck breast fillets for six to 12 hours. If you’re short on time, just a few hours in the brine will always help.
