ToggleExpert Tips That I Recommend
- You need to cool the filling before adding it to the pastry, as a warm filling can make the pastry soggy.
- Make sure you cook the mushrooms just until they release their moisture. Excess liquid can make the pie watery.
- When you stir the flour into the mushroom mixture, cook it properly so the flour loses its raw flavor.
- Keep the filling thick; it should be creamy in texture before you add it to the pastry.
- Chill the pastry to enjoy a flaky and crisp crust.
Recipe Variation for Different Diets
- Keto Version: Replace regular flour with almond flour; also use almond flour pastry instead of regular pastry. Instead of crème fraiche, use full-fat crème fraiche.
- Gluten-Free Version: Instead of regular pastry dough, use shortcut pastry dough. Add gluten-free crème fraiche to the recipe.

Gordon Ramsay Turkey And Ham Pie Recipe
Ingredients
- 25 grams Butter
- 2 leeks trimmed and finely sliced
- 200 grams Chestnut Mushrooms
- 200 grams leftover cooked ham roughly chopped
- 25 grams Plain Flour plus extra for dusting
- 500 ml Chicken Stock
- 150 ml Crème Fraîche
- 600 grams Leftover Cooked Turkey
- Sea Salt
- Freshly Ground Black Pepper
- 2 Tablespoons Parsley
- 400 grams Puff Pastry
- 1 Egg
Equipment
- Bowl
- Saucepan
- Spatula
- Spoon
- Baking Dish
- Oven
- Knife
- Rolling Pin
Method
- Add butter to a hot pan over medium heat. Add the leek to the pan when the butter melts. Cook them for about 3 to 4 minutes until they soften. Remove them from the pan and set them aside to cool. Now, add mushrooms and ham to the same pan over medium heat. Cook them (about 5 minutes) until the mushrooms soften.
- Add plain flour to the pan and stir for a few minutes (make sure there are no lumps). Now add chicken stock to this pan and stir. As it starts boiling, add creme fraiche to the pan and let it simmer for a few minutes. Let this sauce reduce and thicken.
- Remove the sauce from the heat and stir in the leeks and turkey pieces. Add parsley and set this turkey filling aside. Let it cool completely before baking it into the pie.
- In a medium-sized pie dish, transfer the turkey and ham filling. Roll the pastry using a rolling pin on a floured surface. Cover the pie dish with this pastry and trim the excess pastry with a sharp knife and seal the edges of the pan with the pastry dough. You can make a small hole in the center of this pastry lid to let the steam escape.
- Brush the crust of the pastry with egg and bake it for about 40 to 50 minutes until the pastry is crispy and golden brown.
