Expert Tips That I Recommend

  • You need to cut the center without cutting it all the way through. Then try to pound it gently so that it has even thickness and rolls neatly.
  • Avoid overfilling it, and keep the cheese, sage, and membrillo in a compact layer. Too much filling can spill out during roasting.
  • You can use kitchen twine to secure the pork and keep the stuffing intact.
  • To enjoy a crispy golden exterior, you need to sear it well.
  • Fresh sage can become bitter if scorched. You can keep some sage leaves under the pork rather than exposing it directly to high heat.

Recipe Variation for Different Diets

  • Keto Version: Try to replace Manchego cheese with full-fat Manchego cheese, and membrillo with sugar-free quince-style preserve.
  • Gluten-Free Version: You can replace Manchego with gluten-free Manchego; instead of membrillo, use gluten-free quince paste. Also use gluten-free sherry in the recipe.

Ingredients

  • 2.2 pounds Pork
  • 6.17 ounces Manchego Cheese
  • 5.29 ounces Membrillo
  • 2 Sage Sprigs
  • 1 Thyme
  • 1 Garlic
  • Medium-Dry Sherry
  • 7.03 Olive oil
  • 1 Sea Salt
  • 1 Black Pepper

Equipment

  • Oven
  • Knife
  • String
  • Roasting Pan
  • Bowl
  • Scissors
  • Spoon
  • Spatula

Method

  1. On a chopping board, lay the tenderloin along the length. Open the meat out from the center into a long rectangular form and season it with salt and pepper.
  2. Place the slices of cheese and Membrillo in the center of the meat. Arrange a layer of sage leaves on the meat and roll it to enclose the stuffing.
  3. Tie the string along the length of the tenderloin at intervals of 3 cm.
  4. Add thyme and the remaining sage to a heatproof roasting pan. Add garlic and lay the pork on top with the skin side up. Drizzle some olive oil over it and sprinkle some salt and pepper for seasoning.
  5. Transfer this roasting tray into a preheated oven (220 C) and cook for about 20 minutes until the skin is crispy and golden. Now, reduce the heat to 180 C and cook for another 50 minutes until the pork is evenly cooked. Remove the pork from the oven and place it on a serving tray. Keep it aside to rest for a few minutes
  6. Place the roasting tray over medium heat. Add sherry and stir while scraping the bits of the pork from the bottom of the tray. Reduce the heat and squash the garlic and take out all the herbs from the pan.
  7. Add the juice from the meat in the serving plate to the pan. Cut out the strings from the pork and cut thick slices of the pork tenderloin and serve.
