  • 500 g Piece of Higher-Welfare Pork Tenderloin trimmed
  • Olive Oil
  • 18 Small Corn Tortillas
  • 2 Limes
Marinade
  • 2 Red Onions
  • 6 Cloves of Garlic
  • 2 Dried Chipotle Chilies
  • 1 Ancho Chili
  • ½ a Bunch of Fresh Coriander
  • 1 Teaspoon Ground Cumin
  • ½ Teaspoon Sweet Smoked Paprika
  • 3 Sprigs of Fresh Thyme
  • 2 Tablespoons Red Wine Vinegar
  • 1 Tablespoon Tomato Purée
  • 2 Tablespoons Dark Brown Sugar
  • ½ Orange
Rainbow Salad
  • 1 Corn On the Cob
  • ¼ of a White Cabbage
  • 2 Tablespoons White Vinegar
  • 6 Mixed Radishes
  • 2 Carrots
  • 3 Little Gem Hearts
Avacado Salsa
  • 2 Ripe Avocados
  • 1 Fresh Green Chili
  • 2 Spring Onions
  • ½ a Bunch of Fresh Coriander

Method
 

  1. First, make a marinade; meanwhile, peel and chop the onion and garlic.
  2. Then heat a splash of oil in a pan over high heat and cook the onion and garlic for 10 minutes, until browned and softened.
  3. Saute the achu chilies in hot water and pick the coriander stalks and chop them finely.
  4. Now drain and chop the chilies, then add some coriander stalks to the pan along with cumin, paprika, and thyme. Cook for five minutes.
  5. Add some vinegar, tomato puree, sugar, orange zest, and juice, along with a pinch of salt and pepper, to 400 ML of boiling water.
  6. Bring back to a boil, reduce the heat, and cook on low flame for 15 minutes.
  7. Allow the mixture to cool, remove the time stocks, then process it in a food processor until smooth.
  8. Now place the pork in a roasting tray, marinate it all over, and cook for 4 hours.
  9. Preheat to 220°C. Then remove the pork from the marinade, brush off any excess marinade, and add it to a saucepan for later.
  10. Reduce the Oven temperature to 160°C and cook for 5 to 7 minutes until pork is tender and slightly pink in the middle.
  11. Put the pan of marinade on the hob, adding any juices from the pork, and let the mixture reduce over medium-high heat for 10 minutes until it is sticky and delicious.
  12. Now prepare the rainbow salad: soak the corn for 10 minutes, then drain and cook in a pan of unsalted boiling water for 10 minutes.
  13. Now, shred the cabbage and place it in a bowl with vinegar and a pinch of salt; mix it all together.
  14. Cut the kernels from the husk, finely slice the radish, then peel carrots into ribbons with a speed peeler.
  15. Cut the lettuce, then add veg to the cabbage mixture.
  16. Make avocado salsa by scooping out the avocado, adding some chilies and spring onions, then roughly chop the desired coriander leaves.
  17. Mix all the ingredients in the bowl and add some lime juice.
