    Expert Tips That I Recommend

    • Make sure you trim away silver skin and excess fat so that the Wellington cooks well.
    • Always apply the mustard immediately after searing. It helps the mustard stick better and adds a wonderful flavor.
    • Cook the chopped mushrooms until dry. This way, they won’t affect the texture.
    • Don’t add the hot mushroom mixture to the Parma ham. Let it cool before assembling.
    • Keep the pastry cold to create perfect layers.

    Recipe Variation for Different Diets

    • Keto Version: Instead of regular pastry, use almond flour pastry, and swap wheat flour for coconut flour. Also remove chestnuts from the preparation.
    • Gluten-Free Version: Add gluten-free mustard to the recipe. You can add almond flour pastry instead of regular pastry. Also swap wheat flour with coconut flour.

    Storing And Reheating This Recipe

    Storing

    • First, let the Wellington cool down completely, and wrap it tightly and store it in an airtight container. It will remain fresh for 3-4 days.
    • You can store it for longer by wrapping it and placing it in a freezer-safe bag. It will remain fresh for 1-2 months.

    Reheating

    • Stovetop: Add the Wellington to a pan. Cover it and gently warm over low heat for 3-5 minutes. Turn the slices and then heat for another 1-2 minutes.
    • Oven: Preheat the oven to 180 °C. Now add the Wellington slices to the oven-safe dish. Cover with foil and heat for 15-20 minutes.

    Ingredients

    • 2 Beef Fillets
    • Olive Oil
    • 500 g mixture of Wild Mushrooms
    • 1 sprig Thyme
    • 500 g Puff Pastry
    • 8 slices of Parma Ham
    • 2 Egg Yolks
    • Sea salt and freshly ground black pepper

    For the red wine sauce

    • 2 Tablespoons Olive Oil
    • 200 g Beef Trimmings
    • 4 large Shallots
    • 12 Black Peppercorns
    • 1 Bay Leaf
    • 1 sprig Thyme
    • Splash of Red Wine Vinegar
    • 1 x 750ml Bottle Red Wine
    • 750 ml Beef Stock

    Equipment

    • Pan
    • Bowl
    • Tongs
    • Blender
    • Spatula
    • Cling film
    • Knife
    • Spoon
    • Basting Brush

    Method

    • Wrap each piece of beef tightly in three layers of cling film to help shape it. Chill overnight.
    • Remove the cling film. Heat a little olive oil in a hot pan and quickly sear the beef for 30–60 seconds, turning to brown all sides while keeping the center rare. Remove and let cool.
    • Finely chop the mushrooms. Fry them in a hot pan with a little olive oil, thyme leaves, and seasoning. Once they release their moisture, cook over high heat for about 10 minutes until completely dry and paste-like. This mushroom mixture is called a duxelle. Set aside to cool.
    • Cut the pastry in half. On a lightly floured surface, roll each piece into a rectangle large enough to wrap one beef fillet. Chill in the refrigerator.
    • Lay a large sheet of cling film on your work surface. Arrange four slices of Parma ham in the center, slightly overlapping to form a square. Spread half of the cooled duxelles evenly over the ham.
    • Season the beef and place it on top of the mushroom mixture. Use the cling film to wrap the Parma ham around the beef. Roll and tie the cling film tightly to create an evenly shaped log. Repeat with the second fillet and chill for at least 30 minutes.
    • Brush the pastry with egg wash. Remove the cling film from the beef and wrap each fillet in pastry. Trim away any excess pastry, then brush the outside with more egg wash. Cover with cling film and chill for at least 30 minutes.
    • Meanwhile, prepare the red wine sauce. Heat the oil in a large pan and brown the beef trimmings on all sides for a few minutes. Add the shallots, peppercorns, bay leaves, and thyme. Cook for about 5 minutes, stirring often, until the shallots are golden.
    • Add the vinegar and simmer until almost completely reduced. Pour in the wine and boil until nearly reduced. Add the stock and bring to a boil, then reduce the heat and gently simmer for 1 hour. Skim off any scum as needed.
    • Strain the sauce through a fine sieve lined with muslin. Adjust the seasoning and set aside.
    • When ready to bake, lightly score the pastry and brush it again with egg wash. Bake at 200°C (Gas Mark 6) for 15–20 minutes, or until the pastry is golden and cooked through. Rest for 10 minutes before slicing.
    • Reheat the sauce and serve the Beef Wellington sliced with the red wine sauce on the side.
