Famous Peameal Bacon Recipe

When I was a kid, I remember my friends in Toronto bringing peameal bacon to school. I found it so tasty that I could not stop myself from eating it. So, today let’s learn the peameal bacon recipe.

Start off with curing the boneless pork loin. In a container, add the meat, water, and seasonings. Brine for four days in the refrigerator. When it’s done curing, cook it in the oven at 400 degrees Fahrenheit for 10 to 12 minutes. You’ll have delicious peameal bacon ready.

First, trim off any excess fat from your boneless, lean pork loin. This helps the peameal coating stick better and gives you a leaner, healthier cut of bacon. Moreover, if you are cooking peameal bacon, use a skillet for a crispy exterior.

Expert Tips That I Recommend

  • Make sure the brine is cold before you inject it. Do not inject hot brine into the meat.
  • Choose a lean, evenly cut pork loin with minimal fat and silver skin.
  • Inject brine on all sides so it flavors evenly.
  • Do not cook for the specified time; check the temperature when it reaches 63 °C.
  • Lightly crush the peppercorns and mustard so they add depth to the recipe.

Recipe Variation for Different Diets

  • Low-Sodium Version: Replace high-sodium seasoning with a salt-free spice blend. Also omit the salt completely.
  • Keto Version: Swap maple syrup for sugar-free maple syrup, and use sugar-free maple glaze instead of a sugar-based glaze.

Ingredients

  • 4 lbs Pork Loin
  • 12 Cups Cold Water Divided
  • 1 Cup Maple Syrup
  • ½ Cup Pickling Salt
  • 2 Teaspoons Prague #1 Cure
  • 2 Tablespoons Mustard Seeds
  • 2 Teaspoons Black Peppercorns
  • 4 Garlic cloves, Pressed
  • 3 Whole Cloves
  • 2 Bay Leaves
  • 1 Lemon Sliced

Equipment

  • Container
  • Oven
  • Baking Sheet
  • Spatula

Method

  • In a large, tall container, add water, maple syrup, salt, cure, peppercorns, mustard seeds, bay leaf, and Prague powder to make a flavorful brine. Mix well until the salt and maple syrup dissolve.
  • Use an injector to distribute the brine evenly over the loin. Make sure the brine reaches every part of the meat to get that amazing taste and texture.
  • Place the brine-injected loin in the container with the remaining brine mixture. Cover the container and let it marinate in the refrigerator for four days. This process lets the meat absorb the flavors and become tender.
  • After four days of marinating, remove the loin from the brine and pat it dry with a paper towel. This step helps the seasoning stick better and gives the meat a nice crust when cooked.
  • Refrigerate the dried loin for a few hours. This will help the meat absorb the brine's flavors.
  • After refrigerating, the peameal bacon is ready to be cooked. You can either fry it in a skillet or bake it in the oven. Whichever method you choose, cook until it reaches an internal temperature of 145 degrees Fahrenheit.
  • If you are baking in an oven, preheat the oven to 400 degrees Fahrenheit. Once preheated, place the cured meat on the baking sheet. Bake for ten to twelve minutes.
  • Finally, your delicious and flavorful peameal bacon is ready to serve. Cut it into thin slices and serve it with your favorite sides for a super special dinner experience.
