ToggleExpert Tips That I Recommend
- Avoid overfilling the filo pastry. A thin, well-layered filo pastry is easier to fold and cook.
- Keep the filo pastry covered with a damp cloth while assembling it to prevent it from drying out.
- Make sure to cook over medium heat until they are properly golden and crispy.
- Try to grate the fennel seeds right before serving so they stay fresh.
Recipe Variation for Different Diets
- Keto Version: Instead of regular filo pastry, use cabbage leaves; swap couscous for cauliflower rice; and add full-fat Greek yogurt instead of fat-free yogurt. Make sure tomato paste is sugar-free and add cucumber instead of pomegranate in the recipe.
- Gluten-Free Version: Swap couscous with quinoa and use gluten-free yogurt instead of fat-free natural yogurt.
